RECIPE: Potato omelette
Ingredients:
6 eggs
3 potatoes(600 gr)
1 small onion
1 green pepper
2 glasses olive oil
salta parsley leaf
Preparation:
First peel and chop the onion into medium cubes then clean the green pepper next remove thestem and seeds and cut it into cubes.If the potatoes are dirty, pass them through water then Peel them, cut them in halflengthwise and then cut each piece into thin crescents of 1/2 centimeters.Put everything in the pan, season to your liking and fry over low heat for 25-30minutes next remove the fry and drain then transfer the oil to a container and set aside next clean the pan with absorbent kitchen paper then crack the eggs, place them in a large container and beat them. Salt them to yourliking, add the fried potatoes, onion and pepper and mix well.Place the pan back on the heat, add a splash of the reserved oil and add themixture. Stir a little with a wooden spoon and wait (20 seconds) for it to startcurdling.Separate the edges, cover the pan with a larger diameter plate than the pan andturn it over.Throw it out again so that it curdles on the other side.
